
Made in Vietnam: Pizza 4P's, a popular Vietnam restaurant chain, produces all of its cheese at its factory in Don Duong, a small village outside Dalat in Vietnam's Central Highlands.

A local source: The factory also produces cheese for hotels, restaurants and dairy shops around Vietnam. Varieties include blue cheese, camembert, mozzarella, raclette, scamorza, ricotta and marscapone.

European influence, local ingenuity: "Despite the French influence, of course, we have developed cheese in our own way," says Keinosuke Konuki, manager of Pizza 4P's cheese factory.

Cheesy business: Each day the factory hand makes a staggering 1,500 to 2,000 pieces of burrata and 2,000 to 3,000 balls of mozzarella.

Hand made: The Don Duong cheese factory uses 5,000 liters of milk a day to make 13 different kinds of cheeses, from ricotta to bocconcini.

All natural: All of their cheese is 100% natural, with no additives.

Hot items: The factory's most popular cheeses are creamy burrata and mozzarella.

Farm to table: Within 24 hours of making the cheese, it's delivered to Pizza 4P's restaurants in Saigon, Hanoi, Nha Trang and Danang.
