We don’t have to wait till meatless Monday nor Hug a Vegetarian Day to embrace our inner herbivore.

We’re dedicating this month’s #CNNFood Challenge to the people who make vegetable dishes exciting and healthy – something more than a healthy-but-sad chopped-tomato-on-lettuce salad.

Whether it’s a warm grape salad with caramelized pear, carrot and chestnut or a stir fried Thai morning glory with fermented tofu and chili, we’d like to hear your favorite veggie dish.
