Buffalo jalapeno poppers

Halve jalapeño peppers lengthwise and remove stems, seeds and membranes with a spoon. (The stem and seeds hold the heat, so leave some in for extra kick.) Sarah LeTrent/CNN
Spoon a mixture of shredded chicken, hot sauce and cream cheese into each pepper half. Sarah LeTrent/CNN
Sprinkle each half with cheddar cheese before putting in the oven. You can also go for the extra point with the addition of bacon and tortilla chip crumbs. Sarah LeTrent/CNN
Let them cool a bit before popping them in your mouth. Having cold beer nearby is also advised. Sarah LeTrent/CNN
