When Rene Redzepi first burst on the scene in 2003 with his restaurant Noma, the fine dining landscape was in flux. Renowned Spanish chef Ferran Adria – considered by many as the best chef in the world – was closing his prestigious temple to culinary experimentation, elBulli.

In stepped one of Adria’s young, ambitious students, who wanted to breathe new life into Nordic cuisine while staying true to local ingredients and his roots.

Fast forward 12 years and the Danish chef continues to surprise and delight his customers and critics alike. With two Michelin stars to his name, Redzepi has become a trailblazer in the world of gastronomy.
