Nasturtium and Arugula Salad with Warm Goat Cheese
A typical salad can be made extraordinary with the addition of edible flowers and gently warmed goat cheese crostini. Nasturtiums come in vivid orange, red and yellow hurs and contain a form of mustard oil that gives them a peppery flavor. They can be found at gourmet stores or by placing a special order with your regular grocer's produce department. Keep them chilled until ready to serve.

Pan Roasted Cornish Game Hen with Asparagus and Morels
The small size of Cornish game hens make them ideal for pan roasting. The hens are accompanied by a sauce that is rich with smoky, earthy taste of morel mushrooms, a relative of the truffle. Morels can be purchased fresh or dried; if they are dried, soak them first in very hot water of 10 minutes, drain and use as needed.

Roasted Fingerling Potatoes with Olive Oil and Sea Salt
This simple preparation is ideal alongside your favorite roasted poultry, fish or meat. Just toss with oil and seasoning and roast them at the same time as your main dish. If you can't find fingerling potatoes, creamer potatoes will work nicely too. Cut the potatoes about the size of french fries for best results.

Strawberry and Rhubarb Crisp with Ginger Ice Cream
Rhubarb is called "pieplant" in some parts of America due to its obvious common use. The celery-like stalks are very tart, so rhubarb is often paired with a sweet fruit like strawberries or kiwis. In England, rhubarb and ginger are considered a perfect match. We have used that thought to add fresh ginger ice cream as the ideal accompaniment to this easy-to-make crisp.
