  • Atlanta's cuisine, like the city itself, has been reinvented several times. Forget fried chicken and black-eyed peas; Atlanta's varied cuisine more nearly resembles southern California's. Because Atlanta is a city of transplants, corporate gypsies and visitors, the food is similarly cosmopolitan. An influx of young, experimental chefs has identified Atlanta with some of the nation's best nouvelle American fare (and—more recently—the New Southern cuisine). While Atlanta lacks ethnically defined neighborhoods such as Chinatown in New York or Little Italy in San Francisco, the hungry diner can easily explore a range from middle American to Middle Eastern. Look for restaurant critic John Kessler's list of best bets in the Atlanta Journal-Constitution.

    Traditionally, many of the best restaurants don't take reservations. There has been a recent movement to accept reservations, but disgruntled diners have found themselves waiting an hour anyway. Atlantans eat out late and often (only residents of Honolulu spend more per capita on restaurants annually). Prime time is 7:30-9 pm. At some restaurants, you must call weeks in advance to reserve a table 7:30-9 pm. Many restaurants expect confirmations within 48 hours of your reservation. A "preferred seating" policy means that calling ahead will put you at the top of the waiting list once you arrive; it does not necessarily mean that a table will be ready.

    Below is a sampling of restaurants in town. Expect to pay within these general guidelines, based on the cost of a dinner for one, not including drinks, tax or tip: $ = less than US$10; $$ = US$10-$20; $$$ = US$21-$50; and $$$$ = more than US$50.

    Abbey—Waiters dressed as monks serve Continental cuisine in this restored 1915 Gothic church in Midtown. Chef Philippe Haddad prepares classic cuisine with a contemporary touch. Favorites include marinated and sauteed ostrich loin and pan-seared Atlantic halibut with truffle mashed potatoes. Wine list voted among the top 100 by The Wine Spectator. Dinner nightly 5:30-10 pm.     Atlanta Fish Market—A huge copper fish marks the front of this Buckhead favorite, which is the only restaurant in the country to hold National Marine Certification. Whole fresh seafood is flown in daily and prepared to order. All styles of fish cookery are represented in the extensive menu: The swordfish with cashew-and-cracked-pepper crust and the seafood brochette with orzo are top sellers.     The Room—Chef Joel Antunes incorporates fresh regional items such as Vidalia onions and Georgia peaches into his creations. French-Mediterranean cuisine with a Thai influence.     Dish—A combination nightspot and neighborhood favorite where chef Sheri Clark puts together an offbeat menu. Specialties include grilled prosciutto-wrapped pork filet with carmelized onions and potato fluff or free-form lasagna with arugula-lobster sauce.     Horseradish Grill—The Horseradish Grill's "southern comfortable" atmosphere and Southern cuisine are nationally acclaimed. Chef David Barry dishes out fried chicken, hickory-grilled Georgia mountain trout and barbecued duck with Vidalia onions and molasses.     Indigo Coastal Grill—One of the most popular restaurants in Morningside, this is a great seafood place with an imaginative fish entree baked in parchment, Cuban-influenced specialties and homemade key lime pie.     Justin's—This southern sister to the original New York eatery is owned by hip-hop producer Sean "Puffy" Combs and pop music producer Antonio "L.A." Reid. It attracts a chic clientele, and stargazers head there to catch famous artists on tour after their shows. Southern/soul, Cajun and Caribbean fare. Highlights from chef Robert Gayle include barbecue chicken wings, chicken livers in cheese grits, Puffy shrimp, Caribbean egg rolls, catfish fritters and red velvet cake with banana ice cream.     Kamogawa—Lovers of authentic Japanese cuisine rave about this restaurant, which features private tatami rooms, kimono-clad servers, Sukiya interiors and a sushi bar. Beautiful presentations at a leisurely pace characterize the traditional Kaiseki dinner.     Mumbo Jumbo Bar & Grill—Since its opening during the 1996 Olympics, Mumbo Jumbo has become a downtown favorite for the late-night crowd and visiting celebs. Its modern American cuisine menu emphasizes steaks and seafood and changes weekly. VIP lounge upstairs features a men's club atmosphere with oversized leather chairs; deejay on weekends.     Ruth's Chris Steakhouse—Although it's a chain, it's a very high-end operation with legendary steaks and service. Nowhere will you find a more succulent piece of meat.     Seeger's—Guenter Seeger, longtime chef at the Ritz-Carlton in Buckhead, turned his own Buckhead home into a premiere dining experience. Sit at the Chef's Table for a chef's menu and peek through portholes into the kitchen, which features a custom-made, red enamel Morice stove—the first in the U.S. The prix-fixe menu changes daily. A sample five-course menu might include Alaskan King Crab salad with glazed mango and vanilla sauce, African squash soup with potato pancake and Seeger's smoked salmon, fallow deer venison with braised pineapple and celery root puree, American and French farm cheeses and for dessert, a cocoa bean Croustillant napoleon with chocolate mousse.     AMERICAN

    Buckhead Diner—An Atlanta institution that packs 'em in nightly. Modern American food served in a glitzy setting. Frequented by visitors as diverse as European royalty and pop music stars.     ASIAN

    Along Buford Highway and Peachtree Industrial Boulevard—both of which run north from Buckhead to the northeast Perimeter highway (I-285)—is a booming Asian business and restaurant community. There you'll find small noodle houses and other authentic Asian restaurants, from Thai to Korean to regional Chinese.

    Sotto Sotto—"Sensation" is one word used to describe this Inman Park restaurant near downtown that serves authentic regional Italian specialties. Atlanta Magazine restaurant critic Christiane Lauterbach "adores" the spaghetti alla bottarga with Sardinian dried mullet roe, lemon and parsley, and recommends the wood-roasted striped bass or pompano and the chocolate soup.     LATIN AMERICAN

    Tierra—Flavors of the Americas are on the menu at this charming little restaurant, which specializes in the cuisines of the Hispanic New World. Favorite dishes of local food critics include pupusa, a Salvadoran griddled corn cake stuffed with cheese and topped with marinated cabbage and mussels in pasilla pepper broth.
