From Desserts and Sweet Snacks: Rustic Italian Style (Morrow)

Here, crisp and refreshing watermelon is carefully seeded and diced, then topped with shavings of bittersweet chocolate. The watermelon, a pure deep pink with a dark shower of chocolate, looks beautiful, and the contrast of flavors is fascinating.

6 servings

Ingredients:

  • 4 pounds ripe watermelon with rind
  • 2 tablespoons sugar, optional
  • 2 ounces bittersweet chocolate, shaved
Method:

Remove the rind from the watermelon, cutting away any part of the flesh that isn't sweet and ripe. Dice the melon and carefully pick out all seeds. If the watermelon is not intensely sweet, sprinkle with the optional sugar. Toss gently. Chill until needed.

Just before serving, spoon the watermelon and juices into chilled goblets and sprinkle chocolate shavings over the top.
