Make this with yellow or pink watermelon. You shouldn't need to sweeten the agua fresca if the watermelon has a sweet, ripe flavor.
Makes about 3-4 cups
Ingredients:
1/4 large watermelon (about 1 3/4 pounds)
1 cup sparkling or still water, plus more if needed
Pinch salt
1/2 ounce lime juice (optional)
Method:
Cut watermelon flesh from rind. Put flesh (seeds and all) in blender container with the 1 cup water and a pinch of salt. Blend until smooth. Strain into a pitcher. Taste and dilute with more water if you like. Add lime juice, if using.
