Preheat oven to 450 degrees Fahrenheit
In a large bowl, stir together 2 tablespoons sage leaves and oil, potatoes, 1 teaspoon salt and pepper until coated. Pour water into a shallow pan or baking sheet and top with potatoes, spreading them out evenly. Cover pan tightly with aluminum foil. Roast potatoes for 15 minutes.
Remove foil; roast potatoes 15 minutes more. With a metal spatula, turn potatoes over. Roast 10 to 15 minutes more, until cooked through and crisped. Serve hot, sprinkling with remaining sage leaves and more salt as desired.
