Italian-Style Baked Beans with Garlic and Sage

4 to 6 servings

Ingredients:
  • 2 cups dried Great Northern, pinto or cannellini beans, sorted, soaked, and rinsed
  • 2 tablespoons extra-virgin olive oil
  • 2 garlic cloves (unpeeled)
  • 1 spring fresh sage
  • Course sea salt
  • Freshly milled black pepper

Preheat oven to 300 degrees Fahrenheit.

In a large, flameproof casserole over medium heat, combine the beans, oil, garlic and sage. Add water to cover by 1 inch, bring to a simmer, then cover and place in the oven.

Bake for 1 to 1 1/2 hours, until the beans are tender. Add salt and pepper to taste, and continue to cook for just 5 more minutes.

Serve hot.
