Celeriac Romulade

Ingredients:
2 cups coarsely shredded celeriac
Juice of one lemon
1/3 cup mayonnaise
1 tablespoon chopped gerkins or sour pickles
1 tablespoon capers chopped
Salt and pepper
1 tablespoon chopped celeriac leaves
Mix the mayonnaise, gerkins, chopped capers together. Add the lemon juice until the mixture is tart and tangy. Add the grated celeriac and toss with the sauce. Add salt and pepper to taste. Chill and serve on a bed of lettuce leaves or on slices of tomato that have been dressed with a splash of oil and vinegar.
