Guadalajara
There is plenty to do in Guadalajara. Places: Visit at night the Belem Cementery (great tour); visit the Cathedral Teatro Degollado Hospicio, Cabañas (great murals of Orozco); Mercado San Juan de Dios (great place to purchase many art crafts typical of Mexico). Food: Tortas Toño (delicious Mexican sandwiches, bring your napkins); Santo Coyote (typical food from Mexico from Chihuahua); Santuario (sit at the plaza and enjoy some Buñuelos -- you need to go in the late afternoon); Close to Belen Cementery: La laja, great country restaurant near Zapotlanejo wonderful meat and other flavors from Mexico. This is what comes to mind but there are many other things to see, do and eat in Guadalajara.

I was living in Costa Rica this summer and made a week trip up to Nicaragua. I was supposed to travel all around to various cities, but after stopping in San Juan (picture) I couldn't leave. I stayed the whole time along one of the most gorgeous beaches my eyes have seen. After a few days of basking, a short taxi and ferry takes you to Ometepe Island where two volcanoes emerged in the middle of giant Lake Nicaragua. While on the island the culture is rich, the food is excellent and the people are amazing. Don't expect five-star NYC hotels, but then again, you can't leave the Waldorf saying you swam in the crater of a dormant volcano, overlooking one of the most beautiful vistas the world has to offer!
